For the past few months we’ve been trying to eat more healthy.  Amazingly enough we’ve been doing pretty good.  BUT, there’s only so many ways to make a salad before things get real boring.  Especially when the man of the house dislikes most veggies.  Anyways, I had seen a similar recipe on Pinterest and tweaked it to make it much easier and used veggies I knew the man would like.

This salad is delicious.  If you love quinoa as much as we do it’s sure to be a hit!

INGREDIENTS:

4 cups cooked quinoa (2 cups dry quinoa makes about 4 cups-ish once cooked)

Chopped veggies of your choice- I used carrots, cabbage, sweet peppers, cucumbers and avocado

Cardini’s Roasted Sesame Asian dressing

Toasted sesame seeds

Barbequed chicken (marinated however you’d like)

Let the cooked quinoa cool in the fridge then add the veggies.  Add the dressing to the salad to taste.  Serve it up with some chicken and enjoy!

Did I mention a certain someone picked out every piece of cabbage?  Yeah, not the two year old.  Her Daddio.  Baby steps.
