It’s almost Easter! I’m so excited to take Presley to the egg hunt this year at the Wooden Shoe Tulip Farm. I think she’ll really get into it and have fun “hunting” with the rest of the kiddos. Plus there’s tons of other fun stuff for the kids to do and millions of beautiful tulips for the kids to run through. Hopefully we’ll end up with nice weather this year… last year the weather was amazing! The little lady is pretty excited about the Easter bunny visiting her… mostly because she thinks he might be bringing her playdough… and stickers. Hopefully he got that memo.
Presley has been really into helping bake lately so today we decided it would be fun to whip up some Easter(ish) cupcakes. These are so cute and really easy to make. I just used a boxed yellow cake and whipped up some buttercream (my favorite buttercream recipe is below) and they were done in no time. You can make the nest with a grass tip like this one.
My naked baking partner. I’m not sure why she always seems to end up being only in undies when we bake. Which is totally fine since she’s usually wearing a sample of each ingredient by the time we’re done :) Someone’s gotta try everything!
The BEST buttercream recipe:
4(ish) cups powdered sugar
1 cup (2 sticks) butter
1 tsp vanilla
3-4 Tbsp heavy whipping cream
Start with all of your powdered sugar in your mixing bowl, add the butter (cut up in to smaller chunks) and start mixing. SLOW speed people! Add about 3 tbsp of the heavy cream and get the mixer up to high speed. This might take a minute to happen without causing a powdered sugar bomb go off. Add the vanilla and an extra splash (or two) of heavy cream and mix on high speed for a couple minutes. That’s it! For the “nest” frosting I just added some cocoa powder to the buttercream, gave it a mix and you end up with chocolate buttercream. So good!
